Chicken korma is a delicious and creamy Indian dish that is made with tender chicken, yogurt, and a variety of aromatic spices. Here is a recipe for making chicken korma at home:
Ingredients:
1 pound boneless chicken breasts, cut into bite-sized
pieces
1 cup plain yogurt
1 teaspoon minced garlic
1 teaspoon minced ginger
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
Salt, to taste
2 tablespoons ghee or vegetable oil
1 large onion, chopped
1/4 cup blanched almonds
1/4 cup golden raisins
1 cup chicken broth
1/2 cup heavy cream
Fresh cilantro, chopped for garnish
Instructions:
In a large bowl, whisk together the yogurt, garlic,
ginger, cumin, coriander, cinnamon, cardamom, cloves, nutmeg, and salt. Add the
chicken pieces and stir to coat well. Cover and refrigerate for at least 30
minutes or up to 4 hours.
In a large skillet, heat the ghee or oil over medium-high
heat. Add the chopped onion and cook until softened, about 5 minutes. Add the
blanched almonds and golden raisins and cook for another 2-3 minutes until
lightly toasted.
Add the chicken pieces and any excess marinade to the
skillet. Cook for 5-7 minutes until the chicken is browned on all sides.
Add the chicken broth and bring to a simmer. Cover and
cook for 15-20 minutes until the chicken is cooked through and tender.
Stir in the heavy cream and simmer for another 5-10
minutes until the sauce has thickened slightly.
Serve over rice and garnish with fresh cilantro. Enjoy
your homemade chicken korma!
